Eat the root fresh; sliced, diced or grated in salads, smoothies, juice extractions, pickled, stir-fried, steamed, boiled or added to soups. The greens can be used like spinach, added to salads, smoothies, juice extractions, stir-fried, steamed or added to soups.
Beetroot is of exceptional nutritional value; especially the greens, which are rich in calcium, iron and vitamins A and C. Beetroots are an excellent source of folic acid and a very good source of fiber, manganese and potassium.
Beetroot, also known simply as the beet, has been gaining in popularity as a new super food due to recent studies claiming that beets and beetroot juice can improve athletic performance, lower blood pressure and increase blood flow.
Other usesOther than as a food, beets have use as a food colouring and as a medicinal plant. Many beet products are made from other varieties, particularly sugar beet.
